Guests begin with warm, crisp totopos (freshly made tortilla chips) accompanied by Hacienda’s signature trio of sauces. A compelling opener that sets the tone for sharing and discovery.
Kingklip Ceviche
A bright, fresh dish featuring lime cured kingklip, accompanied by leche de tigre, avocado crème, salmon roe and pico de gallo. Vibrant citrus notes, creamy avocado, and a briny pop from the roe make this a standout
Tomates Criollos
Charred heritage tomatoes served with salsa verde foam and a persilla (parsley) consommé. A vegetarian friendly highlight that uses the summer produce brilliantly — smoky, fresh, light yet flavourful.
Extremos Quemados
Char grilled brisket glazed with carne de piña, served with salsa macha and pickled sandia (watermelon). Rich and smoky with a sweet tangy twist from the pineapple glaze and pickled watermelon - a bold land based dish.
Cordero Tierno
Tender lamb shank marinated in achiote rojo, paired with fermented chips and fennel. This dish brings a hearty, robust main with a refined twist — the achiote adds colour and warmth, the chips provide texture, and fennel lends aromatic lift.
Maíz en Polvo
Guajillo marinated corn with ancho honey, queso fresco and spiced aioli. This is a clever interlude of flavour and texture - the sweet spicy marinade meets creamy cheese, the corn providing a satisfying bite
Cosecha de Jardín
A garden style dish of edamame, fresh corn, roasted poblano and smoked chipotle - a lighter, yet flavour packed vegetable plate that balances the richness of previous courses and honours fresh summer produce.
