Parc Fermé’s new chef brings taste extravaganza to its menu

Adding a dash of finesse, a splash of innovation and a ton of new flavours, Parc Fermé in Sandton is pleased to announce the appointment of new head chef Atmaram Mahadea.
The appointment of Mauritian born Atmaram coincides with the unveiling of the new Parc Fermé restaurant in the heart of the Sandton CBD, and to that end, an all-new cuisine designed to meet the palate of even the most discerning diner. As executive chef, Atmaram is currently responsible for the menu creation, management of kitchen staff as well as plating design.
Just take one look at the signature dishes being promoted to see the melding of his creole styled and Mauritian influenced food alongside a modern twist of fusion that makes use of only the freshest in seasonal ingredients.
“My style is very different in that I try and bring together a host of flavours from a variety of places. Combined with my experience in the kitchen and the places I have worked at, I think we are creating
something quite different in the Sandton area,” states Atmaram.
Atmaram’s experience to date has included a tenure as head chef at Pearl Valley Golf Estate, prior to which he was the sous chef of the same establishment, sous chef of The Grand Mauritian Hotel and Spa, first cook for Princess Cruise Lines and sous chef for Golden Valley Casino.
Additionally he was also junior sous chef at Emperor’s Palace, senior chef de partie and acting junior sous chef at the Sainte Anne Resort in the Seychelles, as well demi chef de partie at Lemuria Resort also in the Seychelles, commis chef at the Sandrani Hotel and assistant cook at the Merville Hotel’s Grand Baie both in Mauritius.
Bringing his new style to the menu of Parc Fermé, Atmaram is combining both a French and Mauritian flair to the breakfast, lunch and dinner menus. He has also added sushi to the mix, light lunches, snacks and tea and coffee options for visitors looking to take time out over a meeting or wanting to grab a quick bite while on their way through Sandton.
